The Angel Gully Shiraz is made from a parcel of dry-grown vines on the highest point of our Clarendon vineyard. The soil and altitude combined with our intense viticultural regime results in a small crop of evenly ripened fruit, just one tonne per acre. Angel Gully Shiraz is hand selected from a single block of low yielding vines at the pinnacle of the vineyard. A small portion of the fruit is air dried in the style of 'Amarone' after picking to provide an additional degree of complexity. The hand picked fruit is crushed directly into traditional open-topped fermenters then manually pumped-over. The vineyard's combination of cool evenings, deep shale stone soils and naturally low yields imparts spicy, peppery notes, concentrated dark fruit characters and a savory minerality on the palate.
