Ingredients
  • fish stock
  • Head bones and trimmings of Jew Fish or Flathead
  • 1 onion chopped finely
  • 25 ml white wine
  • 1 garlic clove
  • 4 sprigs parsley
  • Juice of 1/2 lemon
  • few celery leaves
  • 1 tablespoon green pepper corns
  • 1 carrot
  • 1 bay leaf
  • salt to taste
Directions

Place all ingredients in pan and add water to cover. Bring to the boil, reduce heat and simmer 20 minutes. Skim occasionally. Strain then serve.
