Salsicce Con Fagioli

Ingredients
- 8 thin Italian pork sausages cut into 3cm lengths
- 1 large brown onion diced
- 375 ml tomato conserve or tomato pasta sauce
- 400 g can of cannelli beans, drained or 300g fresh, shelled borlotti beans
- 20 fresh basil leaves or 2 pinches of dried oregano
- Salt and pepper
- JOSEPH Extra Virgin Olive Oil
Directions
In a frying pan, fry onion in a small amount of Olive Oil for 2 minutes.
Add sausages and brown all over.
Add tomato conserve, basil, salt and pepper to taste.
Once the sauce has reduced, add beans.
Cook for another 5 to 10 minutes making sure not to mash beans.
Take off heat and drizzle with JOSEPH Extra Virgin Olive Oil.
Serve with radicchio salad and wood oven bread.
