Our new Pecorino (wine...not cheese!)
We dreamt of making this wine for 20 years: the Primo Estate Pecorino.
Back in 2000, while travelling through Le Marche, central Italy, we first tasted a white wine that would change the course of our winemaking story.
In the hills near Offida - the village where my grandfather Primo was born - a local winemaker poured us a glass of Pecorino. We were stunned by the class and elegance of that white.
At the time, Pecorino was an ancient Italian variety being quietly revived by a few passionate growers. We came home dreaming that one day, we might see this grape take root in Australian soil.
That dream finally came true in 2021 when a veteran grower in the Adelaide Hills planted South Australia’s first ever Pecorino vineyard. We jumped at the chance to work with the fruit, and the Primo Pecorino was born.
In just a few years, it’s become one of our proudest wines - earning multiple spots in Halliday’s Top 100 and winning a devoted following across Australia. Each vintage has sold out shortly after release.
Now, I’m excited to share the 2025 vintage - it's overflowing with notes of stone fruit, lemon blossom and almond.
Pecorino is the perfect match for your favourite Summer dishes. Lately we’ve been loving it with a simple plate of creamy burrata drizzled with fresh olive oil.
